Curtis Wheat is recovering nicely from his bladder surgery.  He will begin a series of radiation and chemotherapy treatments very soon.Sarah Kirchner has graduated to a cane and is doing physical therapy treatments twice weekly.  She says her brother tells her PT stands for pain and torture.Elmer and Norma Koen did not attend the May rally since their granddaughter was graduating from high school that weekend.

Sarah Doerr’s Rhubarb Custard Dessert

Crust:

  • 2 cups flour
  • 1 cup butter
  • 1 Tbsp sugar
  1. Heat oven to 375.  
  2. Combine crust ingredients until crumbly.  
  3. Press into un-greased 9×13 pan.  
  4. Bake 15-20 minutes. 

Filling:

  • 2 cups sugar
  • 2/3 cup milk
  • 1/3  cup orange juice
  • 4 cups rhubarb
  • 4 Tbsp cornstarch
  • 4 egg yolks, beaten
  1. In sauce pan, combine sugar, corn starch, rhubarb, milk, and orange juice.  
  2. Cook over medium heat until rhubarb is tender and mixture thickened.  Stir constantly! 
  3. Remove from heat.  
  4. Stir a small amount of mixture  into the beaten egg yolks
  5. Add the yolks to rhubarb mixture and return to heat until it boils.  
  6. Set aside to cool  

Meringue:

  1. Beat the 4 egg whites until frothy 
  2. Add 4 Tbsp sugar and 1 tsp vanilla and stir.  

Final Steps:

  1. Pour cooled filling into crust and spoon meringue over filling.  
  2. Bake at 350 for 12-15 min.

Your President’s Ramblings for May

The May rally turned out to be sunny and just the right temperature.  We were moved to the gravel parking near the horse arena due to the soggy ground at the main campground.  However all worked out well and a good time was had by all.The Region 5 “Rollin’ on the River” Rally is Sept. 10-14, 2008.  The excellent brochure, which describes rally activities and contains the Rally Registration Form, is enclosed with this newsletter.  I realize gas is 25 per cent higher than a year ago, but I hope that many of our unit will attend the rally.  The countryside around there is beautiful and the opportunities for touring look very interesting.Finally, the what, why, where, and when for the optional July Free Rally will be set at the June business meeting.
